Pasta made by hand is better.
Good pasta starts with quality ingredients.
Our flour is certified organic, milled finely for a silky smooth texture, and combined with rich eggs from happy chickens and ducks around the Missoula Valley. We hand-knead our dough on spianatoia (a traditional wooden pasta board) to achieve slow, precise hydration, creating a smooth and elastic dough.
Each noodle is individually cut or folded with brass and wood tools, resulting in a subtly varied texture that grips sauce better than its mass-produced, extruded counterparts.
At Will’s Noods, our pasta isn’t uniform; every shape is a unique hand-crafted labor of love, folded just right to hold sauce and deliver that tender, al dente bite.
