Where we began…
Will was obsessed with doughs, he made one every day for months until it was perfect. When Bailey bought him a mattarello (a traditional pasta rolling pin), it was game over. They had decided to start making pasta, using locally sourced ingredients and committed to never use a machine, no matter how tired their forearms became, and so, Will’s Noods was born.
